This is so easy and so good! Use it as you would apple butter. I like it on cottage cheese.
I’ve given this as Christmas gifts to the neighbors and gotten compliments.
Servings: 28 one-Tbsp servingsPrep Time: under 10 mins Cook Time: 8 mins
1/4 cup dark brown sugar, packed
2 Tbsp sugar

1/2 tsp allspice
1/4 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1/2 tsp cinnamon
1-1/2 cup pumpkin (canned or cooked)
Combine the two sugars, water, allspice, ginger, cloves, nutmeg and cinnamon in a 4-cup glass measure or bowl. Microwave on High 3 minutes (watch that it doesn’t burn); stir. Add pumpkin and microwave on High for 5 minutes. Let cool and refrigerate.
Yields about 1.75 cups.
Keeps several weeks in refrigerator or can be frozen.
