Great meal in one pot. The vegetables and ham can be left out and the soup served with a sandwich or salad. Experiment with whatever you have in the fridge to add to the soup. Most people don’t like the smell of this when it is cooking thus do not want to try it. Any leftovers will thicken when refrigerated and more water can be added when reheating. Enjoy!!

Difficulty: Easy

Servings: 6

Prep Time: 15 minutes   Cook Time: 45 minutes or less  

Ingredients

1 pound of dried split peas (yellow or green, or mix them if you want)
6 to 8 cups of hot water
1/2 cup diced/sliced carrot
1/2 cup diced/sliced celery
1/4 cup chopped onion
1 cup ham cubes
Salt and pepper if needed

Directions

Sort peas (get out the debris they may have missed at the pea farm).
Rinse the peas thoroughly and put in a large pot with the hot water.
Add carrots, celery, onion, and ham.
Simmer covered until tender…and then let it simmer more until “mushy”. Add water if it gets too thick for you.
Serve with multigrain bread or crackers.
