Ingredients
1 large onion, diced
4 Tbsp butter
3 c. cooked squash, drained, with all the water drained out.
1 c. crushed Ritz Crackers, plus additional for the topping
1/2 c. sour cream
1 tsp salt
1 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1 c. grated cheddar
Directions
Preheat oven to 350 degrees. Saute onion in butter 5 minutes. Remove from pan and mix all ingredients together. Pour into buttered casserole dish and top with crackers.
Bake 25-30 minutes until top is brown and casserole is bubbly.

I made this for dinner tonight and it was delicious!! I omitted the salt since the Ritz had plenty and I have high blood pressure but yummmmm, I will definately make this often during squash season (much to the dismay of my waistline!)
