Succotash

This is an all in one meal. It takes a little time to make, but the ingredients are simple and your presence is not required for most of the cooking. It also only dirties one pan so less cleaning up!

Excellent in a Dutch oven for camping too!

Servings: 8   Prep Time: 5 min.   Cook Time: 40 min  

Ingredients

2 Tbls cooking oil
1 Tbls minced garlic
2-3 lbs potatoes
1 green bell pepper
1 red bell pepper
1 medium onion
1 lb Polska Kielbasa
Season salt (Nature’s Seasoning)


Directions

Heat oil in a LARGE skillet on medium heat. Add garlic and sliced potatoes. Sprinkle liberally with season salt. Stir to coat well and cook approximately 20 min covered and stirring occasionally until potatoes START to become tender. While the potatoes are cooking slice bell peppers and onions. Add veggies and stir to coat well. Add more season salt if necessary for your taste. Let cook for approximately 10 minutes until veggies start to become tender keeping covered and stirring occasionally. While veggies are cooking, slice Polska kielbasa. Add to the mixture and stir well. Leave uncovered and cook for 10-20 minutes or until potatoes are ready.
