Sweet Potato Casserole

This is basically what the ultimate baked sweet potato would taste like. This recipe can be found in The Ultimate Southern Living Cookbook. I always have lots of compliments and people wanting me to make it again.

Difficulty: Easy

Servings: 8

Prep Time: 42 minutes   Cook Time: 1 hour 20 minutes  

Ingredients

6 medium sweet potatoes
1/2 c. firmly packed brown sugar
2 large eggs
1 tsp. vanilla extract
1/3 c. half and half or milk
1/2 c. butter or margarine, melted


Topping:
1 c. firmly packed brown sugar
2 Tbsp. all-purpose flour
1/4 c. butter or margarine
1 c. coarsely chopped pecans

Directions

Cook sweet potatoes in boiling water to cover 30-45 minutes or until tender. Let cool to touch; peel and mash.


Combine potato, brown sugar, eggs, vanilla, half & half (or milk) and butter; beat at medium speed with an electric mixer until smooth. Spoon into greased 13×9 baking dish.

Topping:
Combine brown sugar and flour; cut in butter with a pastry blender until mixture is crumbly. Stir in pecans.

Bake, uncovered, at 350 degrees for 30-35 minutes or until lightly browned and bubbly around edges.

    This is the exactly the recipe that I use… and just made. I always bake the sweet potatoes first. I never thought to boil them but am thinking it would not nearly be as good. While baking the flavor of them enhances and I just fear it would lose that if they were boiled instead. The juices from them oozes out while baking and they are somewhat caramelized just from baking. I will never touch a canned one again. Boiling them may be a neat experience. I would love to hear from someone who has tried both ways. Thanks for sharing this recipe!

    I made two of these for our family Thanksgiving yesterday. There are no leftovers! This is delicious and will be added to all of our holiday meals. Thanks for such a good recipe.

    I am making this for thanksgiving weekend. First time. Should I boil or bake the sweet potatoes before mashing them? If I bake them, for how long and at what temp?

      I have always boiled them for about 30-45 minutes. I have never tried baking them for this recipe, but I suppose you would just bake them like you would normally bake a sweet potato… just poke some holes in them, wrap them in aluminum foil and bake at 425 degrees for about 45 minutes to an hour until really tender and go from there.
