The Farmer’s Daughter’s Quiche

Yummy way to incorporate dairy, eggs and veggies! Given to me by my niece Heather…the goat farmers daughter!

Servings: 6-8      Cook Time: 35-40 minutes  


1 pie crust
small onion, chopped
1/2 C. baby bella mushrooms, chopped
1/2 C. grape tomatoes, chopped
3/4 C. chopped spinach, chopped
salt and pepper, to taste
1 tsp. basil, chopped
4 eggs, beaten
1 C. milk
4 oz. goat cheese,crumbled or chopped


Saute onion in a small amount of butter. Add mushrooms and tomatoes until onions are translucent. Add salt, pepper and basil. Remove from heat and add spinach.
Beat eggs with milk, add cheese.
Place veggies in prepared pie crust. Pour egg mix over top.
Bake at 375 for 35-40 minutes or until it’s browned and no longer “wiggles”.
