Cover zucchini with boiling water for 15 minutes, drain. Add remaining ingredients. Place in unbaked pie shell, dot with butter and sprinkle with 5 Tbsp. of lemon juice. I prefer Minute Maid lemon juice (yellow plastic bottle-found in my grocer’s freezer-near the lemonade-the plastic bottle is in a black box labeled Minute Maid). Cover with the top crust. Bake at 450 degrees for 15 minutes and at 375 degrees for 60 minutes or less–depends on your oven.
