
This is a crustless quiche – excellent both cold or hot. Can be eaten for breakfast lunch and dinner – totally versatile. Can bring it to a picnic or a housewarming or whatever. Uses ingredients that we have an abundance of (especially this time of year!).

Prep Time: 10 minutes Cook Time: 25 minutesIngredients
3 cups thinly sliced zucchini
1 cup bisquick (I use 1 cup of flour, 1 tsp. baking powder and a little salt)
1/2 cup chopped onion
1/2 grated cheese (any kind)
2 Tbls. chopped parsley
1/2 cup canola oil
4-5 beaten eggs
Salt and Pepper to taste
Directions
Preheat oven to 350-degrees. Grease a 9 x 13 pan (or a 9 x 9 if you like it thicker). Mix all ingredients in a large bowl, stir to coat the zucchini. Spread in the pan. Bake until golden brown (about 25 minutes). Cool (or not) and cut into squares. Seriously…that easy and that delicious!
