1/2 cup shortening
1/4 cup sugar
2 cups squash, cooked, mashed and unseasoned
4 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon salt
1 cup brown sugar
3 eggs
2 cups all-purpose flour

Preheat oven to 350F. Grease square pan. Beat together shortening, brown sugar and shite sugar unti light. Add eggs, one at a time, beating after each addition. Beat in squash. Combine dry ingredients and gradually stir into beaten mixture. Spread in greased pan. Bake for 30 mins. Cool in pan. Spread with orange icing (optional). Cut into bars.

What size pan?

A square pan is usually 8 x 8 or 9 x 9.

These really are delicious! Especially with cream cheese frosting like carrot cake. They're good with nuts added too.
