Can I steam juice citrus fruit? And if so, do I need to remove the skins first?

Wow MrsNutMeg!  Now THAT’s a question!  I do believe you CAN use a steam juicer for citrus, but I don’t believe you should steam the peels so yes, in this case you should peel them first.

I suspect the skins have so much oil in them that they shouldn’t be steamed, also, the pith (thick white part of the skin) is usually quite bitter, so I suspect that would be a problem too.

Here’s a link to a good and reliable site about canning in general, and they have a section just for steam juicers.  http://www.pickyourown.org/steamjuicers.php
