I just found out about an uncooked commercial product used in Britian: passata. Apparently it’s strained tomatoes. Not cooked. Just the seeds & skin removed.

 

Would you pressure can this? water bath? Any idea? If this has already been covered, I apologize. I keep reading the threads here and didnt’ remember anything like this.

 

I heard about it on a BBC good food post about making your own pizza. Then I found this:
