 I heard about the “shortage” this morning on the news from 2 different  well known national news sources. They both stated that this may not be a real shortage, but moe of a marketing ploy to sell product. Never the less, I don’t think it is something I personally will go out purchase for my pantry.wink

Well, there are a couple of things that I use Velveeta in, and may use a couple of pounds a year total.  Including a pound or so for gifting the infamous dip.  (Yeah, one friend expects it every Christmas!)  And in spite of trying Mac & Cheese using every possible combination of cheeses and baked, with and without toppings and wonderful things added in – I still prefer simple pasta with Velveeta to all of them.  With sautéed onions and salsa.

This could well be just a brilliant marketing ploy.  But, this is also the time of year when more people are watching games and assorted other sports (like the Olympics), entertaining and all that.  It is ALWAYS when they sell the most of it.  Perhaps so many people being closer to home because of the weather has also contributed to the current shortage?

 I have to admit, it does make the best dip, the dip at our favorite Mexican resturant was something I really looked forward to, one evening the waitress told us it was made from Velvetta and salsa. I, however, never made it at home, it was much nicer to have it at the resturant. My Husband also likes his mac and cheese made with Velvetta, I keep a loaf in the fridge, it keeps for a very long time.

 Shortly after I left the above comment, there was a “how to” segment on the news—they made Velvetta cheese. Kudos to all of you that make your own, I think anytime you can prepare a product in your own kitchen it is so much better, you know what went into it and how and where is was prepared.

I’m wondering if Suzanne uses a home made Velveeta or store bought???  I think I’ve seen a recipe here for home made, right?  I’m just wondering if it’s a suitable replacement for store bought in Morgan’s soup!?
