If you’re looking for a banana bread with lots of banana flavor, you’ve found it. Loaded with four medium bananas, this banana bread is moist and delicious with a soft but firm crumb that makes slices easily toast-able. This easy one-bowl recipe cleans up fast. No electric mixer? No problem. You can also mix this recipe by hand.

The best bananas are over ripe bananas. The recipe calls for four medium bananas. If you have large bananas, use three.

Grease your loaf pan well and the bread will release easily. You can also line the pan with parchment paper. Be sure to wrap tightly after cooled. This bread actually tastes even better after two days, if you can wait that long!

Feel free to make this banana bread your own. Add raisins or other dried fruit, nuts, or chocolate chips. Use 1/2 cup to 1 cup additions.

Loaf is timed to a 9 x 5 loaf pan. If you use a different size pan or muffin cups, your bake time will vary.

Best Ever Banana Bread

This banana bread recipe is downright scrumptious, with plenty of flexibility to make it your own with raisins, nuts, or chocolate chips. Makes one loaf.

Makes 10 servings

Prep Time: 10 minutes | Cook Time: 60 minutes | Total Time: 70 minutes

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/3 cup sour cream
  • 4 medium over ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Special Equipment

  • 9 x 5 loaf pan
  • Electric mixer

  • Directions

    1. Grease a 9 x 5 loaf pan. Preheat oven to 350 F.
    2. In a large mixing bowl, combine butter and brown sugar. Beat with an electric mixer. Add eggs; mix again. Add sour cream, mashed bananas, and vanilla. Beat to combine.
    3. To mixing bowl, add flour, cinnamon, baking soda, and salt. Beat to make a batter. Don't over beat. If including nuts, raisins, or other additions, stir in with a spoon now.
    4. Spoon batter into prepared loaf pan. Bake 60 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Wrap tightly to store.
