Used to can all those lovelys…When I grew up..We were designated a small knife, bowl, waste bowl, a bushel of beans and a green bean lecture…
Look the bean..string the bean..snap the top, pull the string down to the tail, snap the tail and back up..keeping one long string tail intact…no tiny strings pieces showing (hard to do)never could keep one intact..LOL Next check bean for spots and cut out..(spots spoiled the jar)..then snap bean in equal lengths 1 1/2 inches to 1 3/4 inches…so when canned they would look even and cook even…and Mom said the jars would pack easier and look beautiful if even in size…If you’re going to plant’em, raise’em and pick’em then they might as well look like a blue ribbon work of art when you can’em whether you enter them in the fair or not…….LOL
