I love this soup!

How to make Baked Potato Soup:
4 large baking potatoes
10 strips of peppered bacon
2/3 cup butter
2/3 cup all-purpose flour
1 medium onion, chopped
7 cups milk
1 cup cheese, shredded (cheddar or pepper jack or whatever you like!)
8 ounces sour cream
3/4 teaspoon seasoned salt
Bake potatoes; cool, peel, and cut up. While potatoes are baking, fry bacon. Cool and crumble.
In a large soup pot, melt butter. Add flour and chopped onion. Once butter/flour/onion mixture thickens and bubbles, add the milk, cheese, sour cream, potatoes, and seasoned salt. Simmer for 10 minutes. Stir in crumbled bacon. Serve immediately.
Note: If you use regular bacon, add 1/2 teaspoon of coarse ground pepper. Or, add some coarse ground pepper even if you do use peppered bacon. As much as I love this soup, this soup loves pepper!

I think I’ll just pop over for lunch today. Is there any fresh bread/rolls to go with that? And what’s for dessert? 😆

I’m in, Suzanne! Yum!
BTW, I’ve made the chocolate pudding cake several times now. Mom has a recipe that is similar, except hers takes 1/2 cup of melted butter. Ugh. I get a gall stone/bladder attack just thinking of it. LOL.
Anyway, I’ve actually made a couple of modifications to your recipe, in the attempt to be a bit healthier. I use whole wheat flour (1 cup) and increase the baking powder to 3 teaspoons, and I halve the sugar in both the cake and the topping. (I prefer a very dark chocolate taste, not particularly sweet.) I also found that I had to add a bit more milk, maybe 2/3 cup instead of the 1/2 cup, and I also add a little bit more hot water over all. (I found mine too dry otherwise. What can I say? I’m not great in the kitchen!)
Actually, I made some last night; it was good!

This is almost exactly the recipe my mom would make on a cool/cold day, only difference, “peppered bacon” did not happen in this household “back in the day”. Thanks for helping me remember a memory. :shimmy:
