This red potato salad is one of my favorite chilled salads, perfect for summer, full of flavor and packed with my next favorite thing after bread–potatoes. Okay, chocolate is in there somewhere, too. And pie. And–

How to make New Red Potato Salad with Sour Cream & Dill:
2 pounds new red potatoes
3 boiled eggs
1/2 cup chopped onion
1/2 cup chopped celery
3/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon white vinegar
1 teaspoon dijon (or regular) prepared mustard
2 teaspoon dried or 1 tablespoon fresh dill
1/2 teaspoon salt
1/4 teaspoon pepper
Cut up potatoes (leave skins) and boil. Cool and drain. Chop eggs, onion, and celery, and combine in a large bowl with potatoes. Add mayonnaise, sour cream, vinegar, mustard, dill, salt, and pepper. Mix thoroughly and chill.
That’s it. So easy. So good.

I make this potato salad also, it is always a big hit. Although my father still goes by his standby mothers potato salad, somethings are hard to break!

I have made potato salad lately…but I am so finicky. I like creamy potato salad. I don’t like chunky, and I would NEVER eat a peeling. I know, I heard it for years from mother “that is where all the minerals and vitamins are”..ick, so what. :fryingpan: My husband eats them, so when I am hurried, I steam them just like above and serve them to him…but if I eat a couple, I will remove that peel first. His grandfather had a poato farm in NY…they even eat them RAW. ICK…HATE potato skins at a resteraunt too…YUCK…but I have to say, your salad is PRETTY. I make my creamy potato salad about the same way. My sister love the German potato salad, served warm or hot.

Would you invite me for a meal? I’m not picky…I love your breakfast, lunch, and dinner recipes. Or just have me over for dessert. I like butter on my butter, and there isn’t a kind of chocolate I don’t like. My perfect food includes both, with sugar to boot. English toffee (butter) covered in chocolate, and crumbled into rich vanilla ice cream with a swirl of chocolate fudge makes me swoon. Oh no! I just did the dishes from breakfast, and I’m already craving ice cream. See what you do to me?
On another note, this year it looks like I’ll have an abundance of tomatoes, and a few beans, and not much else with all the rain. Do you have any recipes for tomato sauces or ketchups and salsas that I could can?

I just made this to go with tonight’s steaks. I substituted green peppers for the celery and added a dash of Worchestire(sp?) to the dressing. It was BIG hit! Definitely making this again. Thanks Suzanne!!
