After I posted about this odd episode, in which I used a quickie box mix to whip up something to serve unexpected guests, someone commented that I should make up a homemade mix. That is a great idea! And here it is.
Inside that box mix was what looked like about a 14- or 15-ounce can of pie filling and a small bag of topping mix. THAT’S IT. To make your own homemade quickie dessert mix, lay in several cans or jars of fruit or pie filling. Make up several baggies of the mix. Now you’re ready any time company comes a-calling!
I’ve included the measurements for both a single mix or a bulk mix.

How to make Two-Minute Fruit Crisp:
1 can store-bought or 1 pint home-canned fruit/pie filling
1 baggie Fruit Crisp Topping Mix
Fruit Crisp Topping Mix–
1/2 cup old-fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/2 teaspoon cinnamon
1/4 cup butter or margarine
To prepare the topping mix, combine the first four ingredients.
Cut in butter or margarine with a pastry cutter.
Store in a small sealed, labeled baggie or container in the refrigerator or freezer. If you don’t want to store this in the refrigerator or freezer, don’t cut the butter/margarine into the mix until you are preparing the dish. (Might add an extra minute or two to your preparation, of course!)
To prepare the dessert, open the can or jar of fruit/pie filling. Pour into a greased 8 x 8 baking dish or round casserole dish or pie pan. Sprinkle topping mixture over the top.
Spread evenly.
Bake in a 350-degree oven for 30 minutes.
Serve warm with ice cream or whipped cream.
Note: If you have a larger amount of company, simply double the pie filling and topping mix. Bake in a 13 x 9 pan.
As an alternative to making up the mixes individually, you could make a bulk mix.
Bulk Fruit Crisp Topping Mix–
2 cups old-fashioned oats
2 cups packed brown sugar
1 cup all-purpose flour
2 teaspoons cinnamon
1 cup butter or margarine
Per use, measure out 1 1/4 cups topping mix and prepare as directed above. Again, if you prefer to store it on the pantry shelf rather than the fridge or freezer, leave out the butter/margarine from the mix and cut it in just before you prepare the dish. This bulk mix makes four 8 x 8 fruit crisps. You can double or triple and so on, however much bulk mix you want to keep on hand.
When unexpected guests call to say they are on the way, pop this treat in the oven in two minutes! It’s also good for a quick dessert any time you’re in a hurry, even if no company’s at the door. Be prepared–there’s always room for dessert!

I KNEW you wouldn’t leave it at using the box….that was just a cliffhanger leaving us thinking “Oh MY, I can’t believe Suzanne used a box mix!” LOL!!! If you have it, it does not make sense to throw it out! :bugeyed: But can you even believe they sell those kits, with how easy it is to make it homemade?
What a great idea to make up a big batch and stick in the freezer! Thank you!

Thanks a lot! This will also come in handy when I can’t think of a quick to fix dessert for Sunday dinner…Or when I wake up on a Friday morning and realize I am supposed to take a dessert to work…or when I forget that it’s my turn to provide dessert for our ladies bible study! This site is my go to place for problem solving!

That’s a handy recipe to have in a pinch! Now that I’m hooked on this blog, I might as well start that recipe box I’ve been thinking about. I already have a notecard box with notecards to start it. Does anyone has a unique way of keeping up with their favorite recipes?

I’m thinking I could make up the topping mix and divide it into one-apple portions. Slice an apple into a rammikin, put on the topping, cover and microwave for three minutes or so, and quickie dessert for one. Might want to finish it in the oven to crisp up top. I think I’ll do a little experimenting. Apple season is almost here.
That’s another nice thing about homemade mixes: you can choose how many servings you want each mix to make.

Whaledancer, you are my new best friend and a true hero to me. lol
I would not have thought to cut it down for just me. Even though I make “cake in a mug”. I just had the last of the kiddos move out and I’m kind of lost cooking for one. Of course, when I had my large freezer, I could just stock it with the left-overs, but the almost-a-kitchen in my new house caused me to wave bye-bye to both my freezer and my clothes dryer. Good thing there’s a clothesline out back. And there are recipes for just one person. Or I would eat a whole cake. And that would NOT be good! lol

This is a similar recipe to what my mom and I have used for years. Our topping has 2 tbsp. butter, 1/4 c. brown sugar & 1 c. of oatmeal. It is our topping for our version of apple crisp.
I put in one medium bag of frozen apples (rescue crab apples are my absolute FAVORITE), make a sauce to pour over the apples: 1 c. water, 1/4 c. white sugar, and 1 Tbsp. of cornstarch…heated until it is thick and clear. Then we put the topping on and bake it uncovered in a 350*F oven for 45 min. Oh, I love this recipe. We often double it and bake it in a 2 litre casserole dish and it is easily gone within 2 days here. We love it for a quick breakfast treat the next day, and it is absolutely to die for with thick farm cream or warm with ice cream. I think that I will have to go fishing trough the freezer and make some today. YUM! Now I am soooo hungry! :hungry:
