This cake is so easy to make, I made it the evening we came home from our big road trip. Simple, yet pretty enough for company.

How to make Sunken Apple Cake:
1 1/3 cups all-purpose flour
2/3 cup sugar
2 teaspoons baking powder
2/3 cup milk
1/4 cup butter, softened
1 egg
1 teaspoon almond extract
3 cups sliced apples
1/4 cup sliced almonds
1/4 cup brown sugar
In a mixing bowl, combine all ingredients except apples, almonds, and brown sugar. Mix with an electric mixer till well blended. Pour batter into a greased 8- or 9-inch springform pan. Place apples on top, evenly spaced across the batter. (Apples will sink inside the cake as it bakes.)
Bake at 350-degrees for about 30 minutes or until it passes the toothpick test.
Combine almonds and brown sugar in a small bowl. Stir together. Sprinkle almond/brown sugar mixture across the top of the cake. Return cake to oven and broil on high for a few minutes, watching carefully so as to not burn the topping.
Remove cake from oven; let cool. Release springform pan.
Serve with whipped cream or ice cream and a smile!

Oh, this looks so inviting and delicious. Could one use other fruit too or is the texture and weight of the apple paramount? I was thinking rhubarb, peach or blueberry.
