A Hot and Sweet Jerky Recipe


I had jerky in the dehydrator pretty quick last week because that is one of Ross’s favorite things–and he wanted some of his own deer jerky. He wanted it hot, and I tried a couple different small batches before coming up with his favorite recipe. I looked at about half a dozen recipes before developing my own, based on what Ross liked and what sounded good. You can try this one, or use it as a base for developing your own like I did! Jerky is a simple concept and should be geared to your own tastes.

How to make Sweet Fire Jerky:

1/2 cup Worcestershire sauce
1/2 cup teriyaki sauce
1/2 cup soy sauce
1/2 cup brown sugar
1 tablespoon garlic salt
1 tablespoon onion powder
1 teaspoon crushed red peppers
1 teaspoon black pepper
1 teaspoon lemon pepper
1 teaspoon liquid smoke

Combine all ingredients and mix well. Add 1 to 2 pounds thinly sliced meat, small pieces. Let meat sit in marinade overnight. Dehydrate 4-8 hours, depending on size of strips, at 155 degrees.

This one has an underlying delicious sweetness topped off by heat. As in, HEAT! If you like it more mild, leave out or reduce the crushed red peppers. I developed this recipe for deer jerky, but it will work just as well for beef or pork.

By the way, I’d have a photo of finished jerky, but it never seems to last long enough for me to remember to take one. I’ve got another batch going in the dehydrator this morning. When I fixed the marinade yesterday, I put the jerky pieces in it then also added some butterflied backstrap I was planning to put under the broiler for dinner. This is also a great, flavorful general purpose marinade for meat. I broiled the backstrap after marinading it with the jerky for a couple of hours then cut it up to add to a meat lover’s fantasy pizza for Ross last night–venison, ham, sausage, pepperoni, and onion:

    Do you deliver ? I think that you have Pizza Hut and Dominaoes wooped all over.

    Save me a taste of Ross’s Fire in the Boat Jerky. Will his buddies have smoke comming from their mouths and ears? Glad he got a deer and likes to try all the goodies. Cousin Mark

    Sounds good. My husband ordered an Excalibur for me for Christmas. It arrived yesterday-damaged. I am working on getting it replaced. Boy was I so disappointed. I will saving your recipe.

    While I was grocery shopping today, liquid smoke caught my eye in the meat department, marked down to $1.00 on sale. I remembered this recipe, so I picked up an inexpensive beef roast and a bottle of liquid smoke. I’m going to use it as a marinade since I don’t have a dehydrator, but I think that’s something I should look into.
