Before you stands a glorious pie. (Actually, two.)
Not that all pies aren’t glorious. I made up this pie this week when I was baking a couple pies and managing with what I had on-hand. It’s based on a coconut-oatmeal pie recipe, adjusted for the addition of rum and the lack of enough oatmeal, which I replaced with walnuts. And the result was intoxicating. This one is going into my holiday pie repertoire for sure.
But hey, why wait for a holiday? Every day is Pie Day.

How to make Coconut-Oatmeal Rum Pie (with Walnuts):
3 eggs
3/4 cup light corn syrup
1/4 cup dark rum
2/3 cup sugar
1/3 cup butter, melted
1 teaspoon vanilla
1/2 cup shredded coconut
1/3 cup oatmeal
1/3 cup walnuts, chopped
one unbaked single-crust Foolproof Pie Crust pie shell
In a medium-size bowl, combine eggs, corn syrup, rum, sugar, butter, and vanilla. Whisk to mix. Using a spoon, stir in coconut, oatmeal, and walnuts.
Pour into pie shell.
Bake at 350-degrees on the lower oven rack for 40-45 minutes.
How easy is that? You could be eating this pie right now. What are you waiting for?
P.S. I can’t do this pie justice. Its ingredients are so simple, and yet the flavor is of the gods. If you love rum flavor, this pie has got it in spades. I gave one of the pies away and received immediate requests for the recipe.

Sounds yummy. I would replace the coconut with something else. I do not like coconut. My dh does do I would make one with and one with out. lol. I just might have to make this today or tomarrow. Got to buy walnuts. lol. MMM Pie. With icecream. Got to have icecream.

What temperature did you bake at? I looked over the recipe several times, but I might have missed it? I’m guessing a higher temp than 350 degrees for a least part of the baking time. This looks really great, Suzanne, thanks for the recipe.

Yes! We have set the trap the last two nights and the raccoons are getting in there and taking the bait and yet not getting caught. We are working on a new system! I will be updating in a few days, hopefully with good news, with a post about trapping.

For the raccoons try to partial open (not quite half way around the can) a tin of cat food. Tie it to a dowel rod that has been slid thru the cage. You will want to have a + with the string on top of the lid, it will hold the bait longer in the cage. Make sure you do this with gloves and long sleeves on as you want your scent to stay off the cage. Dad always did this trick to cage capture them up north from the cabin up north.

This was an experiment a couple of days ago so I haven’t tried it with anything else, but I think other liquors would do. I was thinking about trying it with bourbon, actually. I think whiskey would be fine, too.

If you don’t have any rum, you can substitute some molasses watered down with either rum extract, OR pineapple juice + almond extract. I’m trying it with molasses and rum extract instead of the rum, and pecans substituted for the coconut. Sadly, my beau’s allergic to coconut.

If you take the rum and corn syrup out, this is something like a pie I grew up with. We just called it oatmeal pie and when people looked at us funny we described it as “poor man’s pecan pie”. It is a holiday favorite in our house. During Christmas at our parent’s home, my siblings and I (all adults with families of our own) often plead for my mother to make it like we’re little kids again.
