Easy comfort food! Cheesy Sausage Muffins are one of my favorite things. They go great with a pot of beans or a bowl of baked potato soup not to mention breakfast. Or a snack. Or for no good reason at all. Just for the love.

How to make Cheesy Sausage Cornbread:
1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup butter (cut up) or oil
2 eggs
1 cup milk or buttermilk
1 pound cooked sausage
1 cup shredded cheddar
Note: If using my homemade cornbread mix, replace the first six ingredients with 2 1/4 cups of mix.
Fry sausage; drain and set aside.
In a mixing bowl, stir together flour, cornmeal, sugar, baking powder, and salt. Add butter or oil, eggs, and milk or buttermilk. Stir to combine. Don’t overstir. (Sometimes more or less milk is required, depending on slight variations in measuring dry ingredients–add what you need to get a nice, thick almost pourable-but-not consistency.) Add sausage and shredded cheddar.
We know this has to be good.
Go ahead and fill the muffin cups quite full.
Bake at 425-degrees about 15 minutes. (Don’t overbake.)
If you have leftovers, store in the fridge then reheat. You can use any type of cheese you like, not just cheddar, and you can also add chopped onions or peppers! But I’m kind of a purist with these most of the time. I want sausage and cheese and nothing else in them. What more could you want?
*Makes 12 muffins.

This will go great with my dinner!! I wonder if I spread it over a pan of chili and bake it would it be good?? Gonna try it for dinner…:-) I made a couple of batches of Grandmother bread the other day and turned it into french toast and then froze them and they turned out so good! Now even on chaotic mornings we can have homemade breakfast 🙂

Mmmmm…these were delish!!!…I just made a batch, but I used what I had in the icebox…left over cooked Italian sausage…I processed it until it was crumbly and warmed in the microwave oven. I used the buttermilk, and substituted veg. shortening for the butter. I then stirred in about 2 tbl. of chopped jalapeno peppers…I made mine in the large size muffin cups, so it took about 20 min, the last few minutes with a sheet of tin foil covering to keep from browning too much…I served them with scrambled eggs….very savory…MY son woke up and first words, were “what smells so good?” He loved them, and made me promise to make them for him next month when I am gone visiting in Iowa….I guess I could leave him with a batch…

This was a great recipe! I did not have any sausage so I used bacon. It turned out great the bacon made the muffins have a little crunch in them. I also used a mini muffin pan and that made it fun for the kids. :chicken:
