Amazing Egg Salad Tea Sandwiches

8 hard boiled eggs

1/2 cup mayonnaise

salt and pepper to taste

1 tbsp finely chopped fresh dill

6 tbsp unsalted butter, room temperature

20 slices of best quality white bread

Peel eggs and place in medium bowl. Slice eggs and then mash them with the back of a fork. Add mayonnaise, salt, pepper and dill; stir until blended.

Butter the bread then add 2 tbsp of the egg mixture and spread evenly over the buttered bread slice. Cover with another slice of bread. Cut crusts from the sandwich with a sharp knife. Cut on the diagonal and cut in half again.
