Amish Style Oven Fried Chicken

1/3 c vegetable oil

1/3 c (2/3 stick) butter

1 c all purpose flour

1 t salt

2 t blackpepper

2 t paprika

1 t garlic salt

1 t dried margoram (optional)

8-9 chicken pieces

Place oil and butter in shallow pan in 375 degree oven to melt (jelly roll pan works well).  Set aside.  In large paper sack combine flour and seasonings. Roll chicken 3 pieces at a time in the oil, butter mixture then drop them in the sack and shake to cover. Place chicken in baking dish skin side down. Bake 45min @ 375 degrees. Turn chicken pieces then bake 5-10 min longer or until top crust begins to bubble. (serves 4-5 )Chicken

Usually you bake things to make them less fat, but this sounds sooooo much better!

heehee…..that's what I thought…..but I don't use the oil/butter and it just doesn't turn out good!  So I end up frying in the pan, which I'm sure puts more fat into the body!

Well, you know all the studies lately are saying that lard (the non-hydrogenated kind.  The big tubs in some stores often IS hydrogenated so read read read the label) is more healthy than vegetable shortening.  They aren't trying to say it's good to go around eating it with a spoon, but it has much more 'good' fat in it than ever suspected, a little like olive oil.  (notice I said a LITTLE like it)

I'm chuckling at this because we've come full circle on yet another thing that has been labeled as evil and confirmed what my parents and grandparents always said, and as long as you don't go crazy, a little bit of everything is ok.
