I was following the Christmas Gift forum, intrigued with the variety of unusual gifts that you all made. I started thinking what could I do?? Decided it would have to be down the unusual food route. Savoury, as I am not into too much sweet stuff.  Hence Tangerine Dust.  My second effort would be Bacon Jam.  (If I could bear to part with it).  So as I won't be sending it, I am generously letting you in on the recipe.  It's been noted as a "Love Potion" in case you are thatway inclinedLaugh

Bacon Jam

Ingredients:

1 pound of smoked bacon.

1 large onion sliced.

5 cloves of garlic, minced.

3 Tbspns brown sugar.

2 Tbspns Hot Chilli Sauce.

1 cup of coffee.

1/4 cup of cider vinegar.

1/4 cup of Maple Syrup.

Fresh cracked pepper.

1/4 tbspns smoked paprika.

1 Tbspns of Red Wine Vinegar.

Cook the bacon over medium heat until it just starts to crisp.—–set aside.

Add onion and garlic, whilst cooking, slice bacon into 1 inch strips and return to pan. Add brown sugar, coffee, cider vinegar and maple syrup.

Bring to boil, then reduce to simmer for 3 to 4 hours, stirring occassionally.  When it has become a thick jammy consistency and is deep brown in colour, remove from heat.  Cool for 20 minutes, transfer to a food processor, pulse for several seconds to finely chop and blend.

Return to pot, cover and place in the fridge overnight.

Next morning, remove from fridge, skim the majority of fat from the top of the jam.  Place on stove at a low heat.  Add Black Pepper and smoked paprika, Red Wine vinegar.  Taste, if you like it HOT add more chilli sauce.  Simmer for 45mins until all the liquid has evaporated.

Cool and place in glass jars.

Now comes the difficult bit…………………Its too good to give away,unless you are a SaintFrench

I tried it on sliced fresh baguette, and believe me its quite something different and delicious.

My other effort was Peppered Biscotti, whilst I was in the kitchen.  At least this cold weather is keeping me busy.  I'm looking for more unusual  things to tittilate your palates…Bon Appetit

That actually sounds good!  Hmmm.  Wouldn't you have to pressure can it to save it, though?  Or does it not make that much?

Sorry,I forgot to mention it made two four ounce jars. As for keeping qualities!!! mine certainly will not last very long.

I would have sworn that we already had a recipe for something very similar to this posted, but it doesn't seem to be there.  Also cannot find it in my personal files, so I must have dreamed it!  Thought sure we had a good laugh about it about six months ago, give or take…     Butterfly
