OfflineThis really perks up plain oatmeal.
1 cup water
pinch of salt
12-14 fresh or frozen cranberries
1/8 tsp cinnamon
1/2 cup old-fashioned oats
1 med. banana, mashed
Add salt and cranberries to the water and bring to a boil in a small, heavy-bottomed saucepan. Add cinnamon & oatmeal and stir, mooshing the cranberries against the side of the pot. Turn down to a simmer and cook, stirring occasionally, until water is mostly absorbed, about 3 minutes. Meanwhile, mash banana in the cereal bowl. When oatmeal is thickened to your liking, add it to the banana and mix well.
Sometimes I stir in a spoonful of bran and/or ground flax, too.
Per Serving: 271 Calories; 3g Fat (9.9% calories from fat); 8g Protein; 57g Carbohydrate; 8g Dietary Fiber; 0mg Cholesterol; 143mg Sodium. Exchanges: 2 Grain(Starch); 2 Fruit; 1/2 Fat.
