I love this one…

Chicken-and-Veggie Spaghetti Salad

                (makes 6 servings)

3/4 cup seasoned rice wine vinegar

1/2 cup sugar

2 tablespoons vegetable oil

1 tablespoon lemon juice

1 tablespoon lite soy sauce

2 garlic cloves, minced

2 teaspoons dry mustard

1/2 to 1 teaspoon ground black pepper

1/2 teaspoon ground ginger

2 teaspoons sesame oil

1 (9-ounce) package refrigerated angel hair pasta

2 cups chopped cooked chicken breasts

1 red or green bell pepper, cut into thin strips

1 small zucchini, cut into thin strips

1/2 (8-ounce) package shredded carrots

1/4 teaspoon ground red pepper

1/2 cup chopped green onions

2 tablespoons sesame seeds, toasted

Whisk together first 10 ingredients in a large bowl until sugar dissolves.

Prepare pasta according to package directions, omitting salt and fat.  Drain pasta.

Add pasta, chicken, and next 4 ingredients to dressing in bowl; toss to coat.  Sprinkle with green onions and sesame seeds.
