Couscous salad

1 cup medium couscous

1/2 cup raisins

1 cup tomatoes – diced

1 pepper (red, green or yellow) – diced

3 green onions – chopped fine

1 – 398 ml can chickpea

1/2 cup feta cheese

Dressing

1/4 cup olive oil

1/4 cup lemon juice

1/4 cup orange juice

1/2 teaspoon salt

3/4 – 1 teaspoon cumin

3 cloves garlic – minced

1/4 – 1/2 teaspoon Tabasco sauce

Place raisins and couscous in a bowl, cover with 1 1/2 cups boiling water.  Cover and let sit for 5 minutes, fluff with a fork.

Mix tomatoes, pepper, green onion and chick peas with couscous.

Mix dressing ingredients together and add to couscous, toss.  Letting it sit for several hours will enhance the flavors.

Just before serving add 1/2 cup feta cheese 

Sometimes instead of raisins I will use dried apricots.

Thank you for this recipe, I bought couscous a couple of weeks ago…and have (had) no clue what to do with it.

But this looks very tasty….tomorrow I will make feta cheese..

I have never heard of couscous…had to go to wikipedia.  Is this like a fragile pasta or more hearty?  I don't know if I've ever even seen it in a store, but I will look now…………..Thanks!

Hm, its kind of like little grains.  The othe thing that works for this salad is bulgur wheat.  A nuttier flavor.

The only Couscous I've ever eatten is very fine like  ground up pasta and it cooks quickly and pretty much takes on the flavor of what you cook it in. I didn't know that it came in different sizes. Learned something new.
