Cranberry Bread

This is a great bread for the holidays.  In the next few weeks, I'll be baking and freezing several loaves of bread a day…

Cranberry Bread

Stir together in a large bowl:

2 cups flour

1 cup sugar

1 teaspoon cinnamon

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

When well blended, add:

1 cup walnuts or pecans (I like walnuts for this one)

1 cup whole cranberries

Stir to coat nuts and berries.

Stir with a fork until well blended:

3/4 cup orange juice

1/4 cup vegetable oil

1 egg

1 teaspoon grated orange rind

Pour over the dry ingredients; stir just until dry ingredients are completely blended into wet ingredients.

Pour into greased loaf pan (line bottom with waxed paper).  (I grease the pan by spraying it with Pam, then place the waxed paper on the bottom, and I lightly spray it also.)  Bake 350 for 65-70 minutes.  Turn out on cake rack.  Peel off waxed paper.  Turn bread upright and cool on rack.

Bread freezes well.  Wrap in two layers of plastic wrap and place in a freezer Ziploc to freeze.

Bee, that looks deliscious! We had a couple give us a loaf of cranberry bread and it was FAB..the best I have eaten..but unfort. I never got that recipe, from her, darn it!

This is a great recipe.  I've also made mini loaves and tied them up with thin (real) ribbons.  I put them in baskets with mugs and coffee or tea – chocolate is always an appreciated extra.

I made the Cranberry bread today, I didn't have orange juice, but I used orange-pineapple juice, cut back on the amount and added asmall can of drained mandrian oranges.  It's very good, I plan to make more for Thanksgiving and will give some for Christmas presents.  Thanks for sharing this recipe.
