Delish Vegetable Curry
You will need…
1 tablespoon of olive oil 2 cloves crushed garlic 2 teaspoons of cumin 3 teaspoons grated ginger 2 teaspoon sweet chilli sauce 1/2 cauliflower 2 zucchini 1 onion fresh coriander sweet potatoes 1 tin chick peas drained and washed 2 tins tomatoes 1 tin water 2 chicken/veg stock cubes
Then you need to…
Chop veg, drain and rinse chick peas. Heat oil and saute onion, garlic, ginger, spices till tender. Add stock, tin of water and chilli sauce. Stir in sweet potato and tomatoes, bring to the boil and simmer for 10 mins. Add cauliflower and zucchini, cook for further 20 mins till tender. Stir in chick peas and chopped coriander, cook a further 5 mins. This tastes even better the next day as the flavors develop. A real winner here in this home and with anyone else that tried it. Serve with steamed Jasmine or Basmati rice. If you like it with a bit more of a kick use more chilli sauce, I do ;]
*You many need to add a little more water, so adjust when cooking.

Hi Kimmie – this looks great! But I have a question about the ingredients in chilli sauce that you mention? Trying to figure out the equivalent over here

Oh, goodie! A sweet chili recipe to can!
We have a "chili sauce" that is sold here, but is nothing like this.
Now, would cayene chilis be good for this? Or a hotter, milder, or sweeter pepper?? May just have to experiment some, since it looks like we will be having a bumper crop of all sorts of chilis and peppers!

Our sweet chilli sauce is sweet but it has a firey kick…so would use one with a little oompf/kick to it, not too sweet and not too hot..somewhere in the middle.

OK I understand LOL
I would add that a boiling water bath for about 15 minutes would be safer for that recipe.
I used to just fill and let some things seal on their own but a water bath process is easy and good insurance against botulism.

Let me know how you go lovey.
Like soups and stews this curry always seems to taste better the next day, so after making it I usually wait a day (refridgerate it) then have it the next night.
