A bar cookie developed in the city of Nanaimo, just a bit south of me. I find them a bit sweet so tend to cut the bars quite small …. others find that unnecessary!!!
The Original Nanaimo Bar
Ingredients:
***Bottom Layer ***
* 1/2 cup unsalted butter (European style cultured) * 1/4 cup sugar * 5 tablespoons cocoa * 1 egg beaten * 1 1/4 cup graham wafer crumbs * 1/2 cup finely chopped almonds * 1 cup coconut
***Second Layer ****
* 1/2 cup unsalted butter * 2 tablespoons cream PLUS * 2 teaspoons cream * 2 tablespoons vanilla custard powder * 2 cups icing sugar
***Third Layer ***
* 4 squares semi-sweet chocolate (1 oz. each) * 2 tablespoons unsalted butter
Directions:
Bottom Layer
Melt first 3 ingredients in top of double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut, and nuts. Press firmly into an ungreased 8" x 8" pan.
Second Layer
Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.
Third Layer
Melt chocolate and butter overlow heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.

Are graham wafer crumbs the same thing as graham cracker crumbs,Shells? This sounds delicious!

They do indeed. Not sure if they wil make it to the Thanksgiving table, but sometime during the holidays, for sure.

The custard powder makes a thicker layer than pudding would. I don't know what else you could use, I have always used Birds Custard powder.

Nanaimo Bars
Ingredients:
***Bottom Layer ***
* 1/2 cup butter (my butter is always salted)
* 1/4 cup sugar
* 5 tablespoons cocoa
* 1 egg, beaten
* 1 3/4 cup graham wafer crumbs (different from above)
* 1/2 cup finely chopped walnuts (different from above…but I used ground almonds)
* 1 cup fine/medium coconut
***Second Layer ****
* 1/2 cup butter (I used a touch more)
* 3 tablespoons milk (I used all cream…it was at the top of the milk… 1 tsp. more than above recipe)
* 2 tablespoons vanilla custard powder (I used 2 Tbsp. cornstarch, 1/2 tsp. real vanilla extract, a touch of salt, some turmeric…1/8 tsp?)
* 2 cups icing sugar
***Third Layer ***
* 4 squares semi-sweet chocolate (1 oz. each) OR semiswt. chocolate chips (2/3 c.)
* 2 tablespoons butter
Directions:
Bottom Layer
Melt first 3 ingredients in top of double boiler or heavy saucepan. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut, and nuts. Press firmly into an ungreased 9" x 9" pan.
Second Layer
Cream butter, cream, custard powder(or substitutes), and icing sugar together well. Beat until light. Spread over bottom layer.
Third Layer
Melt chocolate and butter overlow heat. Don't scorch the chocolate. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator. Use a sharp knife to cut. Makes 36 squares.
We ate some yesterday evening…YUM!!! I missed them so much. It was, of course, quite a hit with everyone. As I melted the chocolate layer for the top, I was amazed at how fast the turmeric yellowed the filling. The turmeric made it such a bright yellow by morning, no one would even guess that the custard powder was missing! Perfect!
