OfflinePoor Man's Stew
1 pound sausage
1/2 pound hamburger
2 cups of peeled potatoes
1/2 cup celery (chopped)
1/4 cup onion (chopped)
2 tablespoons green pepper (chopped)
2-1/2 cups milk
3 tablespoons all purpose flour
shredded cheese
1-1/2 cups water
In tall saucepan cook sausage and hamburger till browned. Drain off fat. Stir in potatoes, celery, onion, green pepper and 1-1/2 cups water. Add salt to taste (for us, approx 1/2 teaspoon). Cover and cook on low to medium heat until vegetables are tender (about 20 minutes).
Combine 1/2 cup of the milk and the flour; stir into meat and veggies. Add in remaining 2 cups of milk. Heat and stir until just bubbly and thickened. Add in cheese now or allow each individual to add to their bowl (this is what we do because we all like a different amount of cheese).
Makes 6 to 8 servings.
Don't forget to serve with freshly made biscuits.
