Radiatore with Blue Cheese and Toasted Walnuts
(makes 4 servings)
5 cups (12 ounces) radiatore pasta
4 tablespoons extra virgin olive oil – divided
1 cup walnut pieces
1/2 teaspoon minced garlic
4 ounces blue cheese, crumbled
2 scallions, thinly sliced (white and green parts)
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
Cook pasta according to package directions; drain.
Meanwhile, heat 1 tablespoon of the oil in a medium skillet over medium heat; add walnuts and toast, stirring often, until fragrant and lightly browned. Remove skillet from heat and stir in the remaining oil and the garlic.
Place the hot cooked pasta in a large bowl; add the walnut mixture, the blue cheese, scallions, salt, and pepper and stir to coat.

Angel hair pasta is the thinnest of the thin, G. Cooks in a couple of minutes or less. It's my fav. But we usually end up with just "thin" (vermicelli?) unstead.

It's my favorite…lots of ridges and nooks and crannies for sauce. It's hard to find…so when I find it, I stock up. Let me see if I can find a picture so that I don't have to get graphic…
