OfflineThese are soft and buttery. And very easy.
Sugar Cookies
1 cup unsalted butter, melted & cooled (I do this in my mixing bowl.)
Whisk in:
1 cup sugar
1/2 cup light brown sugar, packed
Whisk in:
2 eggs
2 tsp. vanilla
In another bowl combine:
2 1/2 cups flour
1 tsp. baking powder
1/2 tsp. salt
Stir into butter mixture with a rubber spatula or wooden spoon..
Drop by spoonful (I use a cookie scoop) onto cookie sheet. Flatten slightly with greased glass dipped in sugar (colored sugar works fine). Bake 10 – 12 minutes at 375. Cool on wire rack. Makes about 3 dozen.
I always double this because they're a favorite around here and you don't have to drag the mixer out or remember to take the butter out of the fridge.
