This recipe comes thru Elle's New England Kitchen from Domino Sugar.  I made a 1/2 batch the other day and they are VERY easy to do. In the batch I made I did not put the apple pie spice – I just left them plain.  I also used walnuts instead of the pecans.  I also added 2 drops of green food coloring to the egg whites to add a light color to the coating.

Sugared Pecans

A list of ingredients you will need:

1/2 cup – butter or margarine, melted

2 – egg whites

1/2 teaspoon – salt

1 cup – Domino® Granulated Sugar

1 1/2 teaspoons – apple pie spice

1 pound – pecan halves (about 4 cups)

Instructions »

Preheat oven to 325°F. Pour butter into a 15 1/2x10 1/2x1-inch jelly roll pan.

In large bowl, beat egg whites and salt until foamy. Gradually add sugar and apple pie spice, beating just until blended Add pecans and stir to coat.

Spread pecans in a single layer in prepared pan. Bake about 30 minutes or until pecans are crisp and butter is absorbed, turning pecans over with a metal spatula every 10 minutes. Cool pecans on baking sheet until crisp, about 2 hours. Store tightly covered.

Makes about 4 cups.

My favorite recipe for SUGARED NUTS doesn't use the oven.

Butter a cookie sheet prior to starting.

2 1/2 shelled nuts or more (I like pecans, and walnuts are very nice!)

1 c. sugar

1/2 c. water

1 tsp cinnamon (I use more and add ground ginger, cloves, and /or nutmeg – about 1/2 tsp each if I have them. Also, a running over tsp of vanilla, if I have it or feel like it)

1/2 tsp. salt

In a heavy saucepan, combine sugar, water, spices, and salt.  Heat and stir until sugar dissolves in boiling water.   Dump in nuts while stirring.  Stir nuts constantly.  The water will eventually evaporate leaving you with sugared nuts.  The coating won't be even on the nuts.  Don't worry about it, they'll still taste amazing.  Dump out the nuts onto the buttered cookie sheet.  Separate them immediately with forks to prevent them sticking together in clumps.

Let them cool then put into a container with a tight seal.  You can buy cute tins in the Dollar Store.  If you use one of these, line the bottom with waxed paper.  It makes a nicer presentation.
