Tres Leches Cake

(Three Milks Cake)

1/2 cup unsalted butter

1 cup sugar

5 large eggs

1 teaspoon vanilla extract, divided

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1 cup milk

1 (14-ounce) can sweetened condensed milk

1 (12-ounce) can evaporated milk

1 1/2 cups whipping cream

1/4 cup powdered sugar

Preheat oven to 350 degrees.  Grease and flour a 13 x 9 inch baking dish.

Beat butter and sugar at medium speed with an electric mixer until fluffy; mix in eggs and 1/2 teaspoon vanilla.  Combine flour and baking powder; add gradually to butter mixture, stirring to blend.  Pour batter into prepared dish, and bake at 350 degrees for 30 minutes or until wooden pick inserted in center comes out clean.  Pierce cake with a fork all over.

Combine the 3 milks, and pour on top of cake; cool to room temperature.  Cover and refrigerate until well chilled, at least 4 hours or overnight.

Beat whipping cream, powdered sugar, and remaining vanilla at medium-high speed with an electric mixer until thick; spread over cake, and serve.

Serve this chilled and with whipped cream, melted chocolate, or dulce de leche…

I've had this served layered, but this is a simplified version.

Bee, thank you soooo much. I am copying this! I was surfing resteraunts in Texas this afternoon, and noticed one that serves this for dessert!!!! LOL Thank you for posting this! YUM

OK, yet another dumb question:  If you know that the entire cake is not going to be consumed in short order, do you leave the whipped cream off and put it on individual servings instead?

I've never tried it, but a good friend would freeze individual blobs of whipped cream then bring them out one at a time to place on single servings of pie or whatever.  I ate it once (after it thawed), and it was as if it had just been whipped.  I would not have believed it if I had not tasted it!  Never did discover anything special done to it.  Just whip the cream, drop it onto something like a baking sheet, then placed in the freezer.  At least that is all they would claim…

I would do the individual serving thing with the whipped cream – simply because it gets weepy after a while.

Then I hope you know how to do that (posting separately business) I don't have a clue.  I never knew about the freezing whipped cream thing.  I may have to try that.
