Turkey Curry

Serves: 3 to 4
Preparation Time: 10 minutes
Cooking Time: 15 minutes

300 g leftover turkey, skinless and chopped

1 ½ onions, chopped

2 cm ginger, minced

3 garlic cloves, minced

1 tsp ground cumin

1 tsp ground coriander

3 cardamom pods

1 tsp turmeric

1 tsp paprika

1 tsp cinnamon powder

3 tbsp vegetable oil

150 ml water

120 ml yoghurt

salt and pepper

1 saucepan

1 wooden spoon

Heat the saucepan over a high heat. Add the oil and the onions, stir occasionally and cook until the onions begin to brown.

Next, add the garlic and ginger, stir a little and add the coriander, cumin, turmeric, cinnamon, cardamom pods, and paprika. Mix together being careful not to let anything burn.

Mix in the turkey, add the water and finally, the yoghurt. Bring it back to a simmer and season with salt and pepper.

This recipe is for a mild curry. If you would like it a bit spicier, just add a little chilli.

There is of course a quicker method if you havent got all the spices.  Buy a jar of curry sauce!

Yay!  I have the saucepan and wooden spoon, so that's a start.  I'm sure I can find sweaty onions, too, so that part's knocked.

Seriously, thank you very much, Chris.  I love curry and the ingredients you've listed are all readily available at the supermarket in Charlottesville. 

I'll make a curry soon and dedicate it to you.  I'll also add some nice habanero chilis that I grew this summer as I like spicy food.   Devil with Fire
