OfflineThis is my uncle's wife's recipe. They live in Alabama and the sausage is found there locally, so you may not be able to get it. They do have a web site you can order from though. This is the best bean soup I've ever had, hands down. yum. I subbed johnsonville brand andouille spicy sausage and collard greens (i like them better) and its just as good.
TURNIP GREENS SOUP
In a large pot, combine:
3 cans chicken broth
1 package Knorr Vegetable Soup Mix
2 packages frozen chopped turnip greens & roots
2 lbs. Conecuh sausage, sliced in bite-size pieces
3 cans White Navy Beans – rinsed and drained
Chopped Onion
Bring to boil and lower heat to simmer for about 45 minutes.
*You can cut the recipe in half if you don't want to make this much, but it also freezes well if you have leftovers.
*If you can't get Conecuh sausage, use whatever kind of smoked (link) sausage you like.
*The Knorr brand of dry soup mix is key – it's the only seasoning and it's just perfect.
***This recipe just works – so don't worry too much about quantities…Use more broth if you need the liquid (just don't add water)….less beans if you don't like them….as much or as little onion as you prefer.

OfflineHmm. Wonder how long it will take somebody to come up with a substitute for the Knorr's Soup mix. (For those of us with MSG and salt issues.) Seems that I've seen it somewhere – now where was that?
This sounds like a great recipe to have for quick, easy, wonderful winter supper. With crusty bread, maybe even served in a bread bowl?

I've seen it somewhere, but I haven't been able to find it again, not in my recipe file on my computer….

I don't know. It was the one thing she said not to substitute. It has a particular flavor.
I did have it with crusty bread.
My friend gifted me with a starter culture of SanFan Sourdough and I've been babying it for a week. Fri night I baked a loaf after letting it rise for nearly 20 hours. (dbl rise) yum!
