For some of us, the original Ranch Style Beans is one of the best things packed in a can! They are available locally, but I've been pondering how to can them, mostly because replicating the recipe for the beans themselves was beyond my capabilities. So, this was a frustrating unfinished project.
Lisa, the Homesick Texan, has posted her recipe for them, and I am doing the biggest happy dance you've ever seen! (See her version here: http://homesicktexan.blogspot…..ecipe.html) 
Still need to do some research on exact processing times and such, but meanwhile simply HAD to share this bit of good luck! And inquire if others have had the experience of doing this.
Cindy, I know you did chili beans recently. This is basically the same thing. And we probably already have a topic around here somewhere. I just had to post this happy moment, and share it with everyone!

The seasonings sound wonderful in there! and with them being cooked down, there is no worrying about it thickening.
Processing beans is 90 min at 11# for quarts, 75 min at 11# for pints, just like meat.
I am down to only 1 jar left of my chili beans, so I will try this recipe next! and they can be used for so many more things……..refried beans — what an awesome flavor that would be, just beans, chili beans. I can't wait to try them now!

For the inquiring minds out there, one of us will probably post this recipe after we have tweaked it a bit, and had a chance to actually process it! For myself, that will be after a trip somewhere to pick up more pinto beans than we have on hand right now…

Just ordered the pressure canner that CindyP recommended and this may be the first thing that I can. Our menfolk don't care much for beans, our womenfolk love beans. Go figure. I'm thinking pint size jars of ready cooked beans would make great quick meals for the two bean eaters in a size we could finish in one sitting. Rice and beans, Yum!
Now, anybody got a recipe for homemade Mexican chirizo? (I think that's how it's spelled)

I canned regular northern beans for Mom….that's what we grew up on. And it is soooo wonderful to just open a jar (I did them in pints and quarts) when I feel like having bean soup!
I've got the pintos soaking for this to make tomorrow!! I'm just making it as a normal dinner, just so I can taste and maybe (but probably not, it sounds so good) make any adjustments before I do up a load for the canner.

Does it seem that we recent converts get even more excited about the new converts than do the well initiated? Guess it's like so many other things – nothing is as zealous as a new recruit!
Wait a minute, Cindy! We can't be considered newbies at canning any more can we? We've been doing this for a year or more now!
We have used up all the chili from our first experimental pc run last winter! And we have only one of those stacked quarts of chili left. Must be about time for another big pot of chili to can!

It doesn't seem like it's been that long since we started this endeavor! And I still get giddy every time I look at the counter with cooling jars, listening to the ping. And I do a quick calculation of how much each of those jars cost…..and how much sodium is in each one (usually 0).
I don't have chili left anymore! And I used the last jar of chili beans tonight. So this recipe is a must do! We used the canned chili even in the summer with chips and cheese. And I used it for my chili cheese dip and it tasted WAY better than Horm*l with no beans!
