5 pounds black beans
2 pounds garbanzo beans
2 crockpots of chicken stock
3 pounds small white beans
Well, that is all for today. We use the pintos and black beans to make refried beans all the time. We use the white beans by draining, rinsing, then putting back in jar and adding clean cold water to cover beans. Then I put them in my blender or food processor and blend till smooth. I store them in the jar in fridge and use in place of oil in baking. measure for measure.

OfflineSchool has been cancelled everyday this week except monday and I have been canning!
Dried cranberry beans

Pork
Beef
Chicken
The chicken I canned in half pints…just the right size for chicken salad. Every thing else was pints. Wide mouth pints for the beef and pork. I love canning in the winter.![]()

Offline7 pints of chicken (first time)
12 1/2 pints of chicken stock (with leftover still in fridge)
12 1/2 pints of vegetable stock (with almost a pint leftover and in fridge)
Since the vegetable stock just came out of the canner they have not all sealed yet but everything else has.
In addition I have french toast soaking in the fridge for breakfast tomorrow. Dishes done and kitchen cleaned and 3 loads of laundry done and waiting to be folded. I am exhausted.

Offline9 pints and 3 quarts of green beans. A friend came from Nairobi to work with us for a few days and brought me 6 pounds of fresh green beans. (and some asparagus and strawberries!) All the pint and all the quart jars I brought from the US last year are FULL! My mom said I would "never use that many jars." Who's laughin' now?

OfflineI made strawberry jam with delicious fresh strawberries for the first time and it turned out delicious! Reading all the other posts makes this seem like not a very big deal, but for me it is. I have only ever done apple butter before this so it was my first jam and I am so excited it worked out! ![]()

OfflineThis isn't about what I canned today, but what canning goods I used today. This is a particularly lean time right now in my house….I'm sure everyone has been there. Daughter is graduating from university (great gift needed), heading off to Europe for a 3 week trip (extra spending needed) and 22nd birthday (decent enough gift needed), Mother's birthday (good gift needed), Dad's birthday (good gift needed) and a visit from said parents for the first time in 8 years coming in a few weeks. So yeah, things are tight.
But one must not sacrifice on life, even when broke. Sooooooooo, into my pantry I went to my canned goods.
Pulled barbecue beef, baked beans, salsa, and green chile relish all were put to great use last night for a Mexican inspired Sunday Night Dinner (which are legendary at my house).
So, when times are a little less busy with gift buying, I will be canning to replace what I've used. In the meantime, thank goodness for everyone here who helped teach me how to can. You are keeping us together through April and May.
