 Good baking weather---making chocolate cupcakes with chocolate buttercream icing and a few toasted walnuts on top of each cake.

 Today I am doing a good bit of baking, a couple loaves of bread, a rhubarb pie and my version of a Spanish Bar Cake. There are many versions on the internet that tout them selves as the original A&P Spanish Bar Cake, but all of them that I have read contain items that were rationed at the time the cake was first made, no sour cream, eggs, milk or applesauce were in the cake. The original cake was moist, dense and contained raisins. There was not a cream cream icing, but a plain white icing that contained powdered sugar, shortening , vanilla and a bit of water, it was baked in a loaf pan, when cooled cut horizontally, icing put int middle and top only---this is what I am baking. A nice day to bake, no rain(at last) cool and sunny, the grass is cut, laundry done, so I can play in the kitchen today!!

I baked today!!  Zucchini pecan bread, Blueberry Zucchini bread, and now a fresh loaf of white bread to snack on!!

Made a blackberry/ blueberry/ raspberry pie. I had some of each berry that needed to be eaten...used clearjell to thicken the filling...turned out good.

This morning I made banana muffins for breakfast, using Suzanne's Quick Mix recipe. Smelled so good first thing in the morning! Love the Quick Mix, I use it a lot, for muffins, pancakes, scones, etc.

Remember, if it rains on your picnic it's also raining on your garden!

Today is my dear sweet Hubby's birthday, I baked 2 cakes for him, his traditional birthday cake which is a pineapple upside down cake and an angel food cake with fresh lemon zest. This is a special birthday for him and I thank God everyday for having him in my life, I am so blessed.

Today I am baking apple dumplings. I purchased some apples that I though I might like, but didnt, so I decided on dumplings, the apples are very firm and very large so I am slicing them and putting the slices in a crust so they will bake up nice and soft. It is very cool and raining here, so a perfect day for baking.

Just finished baking 4 dozen pepperoni rolls and a double batch of black cocoa brownies, all will be packed up along with a dozen biscuits made this morning, a container of sausage gravy and a jar of apple butter, my Stepson will everything up this evening, I have to find him a wife wink

I am feeling a little frustrated right now with Chickens in the Road, and wanted to share my concerns with all of you. I submitted a recipe for an apple cake in October. I did not write down the date of my submission, but I think it was in the early part of the month. I understand the recipe has to be moderated or what ever term it is called, so I did not expect to see the recipe right away. However, by the 23rd of the month, I still had not seen it so I sent an inquiry to CITR to see if maybe I goofed in my submission. I did not receive any response to my email sent to the help center. On the 26th of October, I sent a PM to BuckeyeGirl as a moderator, asking about the recipe. Again, I have not received any response. So I sent a PM on CITR's facebook page to Suzanne. Still no response. What is going on? How does one get a question answered? Any one else having this issue?

Hello Pam, I don't think the moderators are "moderating" any longer, I had some issues several months ago and sent an email to several of those listed as "caretakers and helpers" of the blog and was told by the person that answered my inquiry that they are no longer partaking in the blog, other than Suzanne, there doesnt seem to be any help, and she really has her hands full right now with some issues (refer back to a post that she made a couple weeks backs pertaining to a brutal attack to her personally) and taking care of the farm and business, she promised to post more when she is able.

I hope you eventually get your recipe printed, apple cake would be very nice this time of the year.

Jo, I appreciate the response. I have been offline for awhile with my shoulder surgery as I could not use the computer. Did not know that there are no moderators. That explains at lot. Thank you!

The recipe is wonderful and very adaptable. I had hoped I could share it with all of you.
