Need recipe for Scali Bread

I think I read that Scali bread is also Vienna bread.  Is it?  I don't know but I buy scali rolls once in a while from a bakery and they are just so good.  I love to slice it in half and toat it.  Oh!  These rolls are perhaps 5-6 inches long and in a little braided roll.  They are just so cute!  And very tastey.  Chewy like perhaps a french bread.

Does anyone know a recipe for Scali bread?   I made the recipe that is on the King Author website and it is just not the same. 

And of course, I have yet to find powdered Licethin here in town!  I want to make the dough enhancer because I just bet it makes a big difference in baking bread and the texture of it.

Deb I got my Lecithin at the health food store.  It's a huge bottle so if you cannot find it, let me know and I will share mine with you.

I found the capsules of lecithin oil but that won't work!

Well please do because I have a large container and it only takes like a Tablespoon or so for a batch…can't remember might be two but this container will last awhile.  Check the health food store …

If liquid lecithin is all you can find, you could add it to the liquid ingredients in your bread recipe.  You could make Suzanne's Dough Enhancer with all the ingredients except the lecithin and use as usual, and then add 1/2 to 1 teaspoonful of liquid lecithin to the water or milk of your bread recipe.  You might have to do some experimenting to find out how much liquid lecithin is the right amount, but you could use it if you can't find the powder or granules.

These capsules is full of oil, or at least I think they are.  Wonder if that would make a difference?  I will try to find a health food store somewhere near.  I can't find one here in town, isn't that crazy!

Yeah, lecithin capsules…just stick a pin in one and squeeze it to get the oil out.  I am 8 miles from town, but they don't have a health food store there, either.  I drive 1/2 hour to get to a vitamin/healthfood store that is run by an Amish gentleman out of his house (and which is very well stocked, btw), and the Amish bulk food store also stocks some kinds of supplements, but not many.  Long story short…I know what you mean!

I got mine at Whole Foods.  It's a bit trendy there, but one thing for sure they do have a great customer service ethic there, once I showed one person the list of what I needed for the enhancer, I had three people scurrying around the store to find everything for me! 

I love living in a small town, but having to drive an hour to find things like this is a real pain.  Do you know anyone who regularly drives to someplace that has bigger stores?  If you call ahead a lot of better stores will have an 'order' assembled for a friend to pick up so it's not too much trouble for them.  Ahhh the joys of rural life eh?

If tomatoes are a fruit, then isn’t ketchup technically a

smoothie?

I'm just going to go over to Tallahassee one weekend and I can probably find everything there. 

There is also a fabulous garden nursery there that I love to go too.  I might try and wait until February to go because there is a huge antique rose sale every year that I go too.  I take the extra seats out of my van so I have all that room to put potted roses in! 

But I don't know if I can wait that long to have all the stuff to make my enhancer with.  I "could" make myself go shopping in the quilt shops there also…you know, to make the most of the trip and all…LOL

Oh, Deb!  That sounds like a wonderful way to conserve fuel, be a good steward, and all that stuff!  Of course, you must combine the shopping for necessities with going to the quilt shops!  How wasteful it would be to simply make a special trip just for the quilt shops…   Cool

Besides, it is educational to keep up with the latest gadgets that save time, money and energy for a quilting project, right?   Happy Flower

You are so right Pete.  I would not want to waste fuel just for a couple things.

I could make myself buy enough to justify driving 2 hours for lecithin.  Of course, I would need to pop over and see what new roses might be for sale at Tallahassee Nursery…buy some fungicide and perhaps their lovely potting soil they make up special. 

Oh and I NEED a couple new cookbooks.  At least another bread book, I am so addicted to bread books.  I know….how many ways can there be to sling together some yeast and flour? But I so love reading cookbooks, not just using them!  Serious breadmakers call the recipe a "formula".  I like that!  I love new "formula's" to play with!

My daughter the chemist said that of course a bread recipe is a formula….you have chemical reactions!  Silly girl, she loves chemistry so that she sees it in everything!
