special treat dinner (for no specific reason 'cept the universe has been dumping on me all month!) sauteed fiddlehead ferns, couscous with spinach and pine nuts, caprese salad with real buffalo mozzarella, and fresh strawberry watermelon slush.  It's a pity party, people—one night only!

We are going to do pizza on the grill, I am excited to see the difference in taste. I just got premade crusts from the grocery, (I know, I know, but it's a Tuesday!) and we'll do a cheese and basil one for the kids, and then probably pepperoni and hot pickled cherry peppers for the grown ups. The temp has cooled down today, so I won't mind sitting by the grill for a bit, this weekend was wicked hot!devil-with-fire

I have left Arizona (over 100 degrees) and landed in Nebraska for the summer…55 degrees. what a difference!

 

we are baking chicken breasts in the oven and will make some kind of chicken burrito with salsa and fresh veggies.shroomshroom

Bonita, I hope June's a better month for you!  (And your pity party menu sounds fantastic.)

 

My CSA boxes have been full of cabbage lately, so I'm making egg rolls tonight.  I made the filling last night and managed to use up 8 cups (!!) of cabbage, plus I made some cole slaw for my honey's lunch today.  I'll serve the egg rolls with brown rice and some roasted asparagus.

 

Anybody have any good recipes that use up a lot of cabbage?  I've still got a big Napa cabbage in the fridge.  We aren't big sauerkraut fans here, unfortunately, but I have printed off Cindy P's pepper slaw recipe and will be trying that soon.

STH – oh, yum, love Napa cabbage.  Last night I made a cobbled version of coq au vin with leftover pasta sauce, lots of red wine, red onion and lovely fresh mushrooms, dished up over brown basmati with steamed zucchini.  I was going to do something creative with more leftovers than what DH & I ate but DH warned me off (hey! it's BETTER the second day!) … think I'll pick up some Napa cabbage and sauté it down since the squash is gone.  We love wilted cabbage topped with red sauce over rice.  Gotta love simple.

Making turkey stew with frozen leftover turkey from Easter, carrots I canned last fall, poultry stock I made at Christmas, and pasta from dough I had in the freezer from Mother's Day.

 Perfect.

Served with a green salad, chive buttermilk biscuits and cheesecake with Bing cherries for dessert.

Visited the farmer's market so tonite we're having roasted beets, beet greens cooked with vidalia & a little bacon.  Entree is the ongoing leftovers from coq au vin cut up and now tossed with pasta bows.  I'm grateful DH rarely minds leftovers since I now have leftover beets and pasta bows …. hmmm, I think one of my favorite things to do in the kitchen is something creative with leftovers.

We are having blackeyed peas, new potatoes, sqaush and roast beef all grown in our garden or pasture.  It is a blessing.  My only regret, I didn't have time to make homemade ice with my own goat milk, but I do have some kelfir cheese that I will serve with last year' homegrown peaches.

DH and I have a beautiful life.

I tried a new recipe for Asian chicken salad:  http://pinchofyum.com/asian-chicken-salad.  I used some of the Napa cabbage and (cheap) peas rather than (expensive) edamame.

 

We both liked it, so it looks like that one's going to be a keeper.  And my boyfriend came home with the news that the doc told him he's borderline diabetic, so he's going to have to eat healthier (that is, eat what STH cooks rather than eating junk food!)  So lots more cooking in my future . . . .
