This isn't actually baking, but I did make a batch of truffles this evening, dark chocolate center with milk chocolate coating.  I still have to make more as these will be given as little extras to a few friends.

Baking 3 french meat pies for Christmas Eve today. I made the crusts and filling yesterday, just have to roll the crusts, fill them, and bake. One more project checked off my list!

 I have a Bacardi Rum Cake in the oven. It is for Hubby for as a Christmas treat. Many, many years ago when he lived  WVA there was a bakery in his home town that made a rum cake that he loved, as most all of the small family owned bakerys, this one one longer exists, I have tried for so many years to find out how they make their rum cake, but was never able to do so, so I am hoping he like this one…………….. this I can tell you for certain—-the batter is really really good!!!! bug-eyed

Ross, I have got to say, those rolls look delicious!

JOJO, the Bacardi Rum Cake is our “wedding cake!”  We married at home and my husband baked that cake (only one he knew!)  I'll be making one on the 29th.

I hope you all enjoy it….it disappears  fast around our house!  fork

With the butter on the layers they come apart very easily. They dump out of the pan but 12 rolls may land in 18 places. If you want them for bragging probably use cotton gloves to take them from the pan.

Hi there, I am very proud of the way my cake turned out. I did some research on the internet, and came across an idea that was perfect. After removing the cake from the oven, let it cool in the pan for 10 mins. Loosen the cake with a rubber spatula around the rim and the center rim (mine pulled away from the outside rim so I didnt do that ) pour the hot glaze round the outer rim as well as the inside rim, and let set in the pan for an additional 30 mis. the cake will soak up all of the glaze, turn it out onto your cake plate–not a drop of the glaze wasted! I plan on using this way of glazing some of the other bundt cakes I bake.

We plan to let this one  “age” for a couple of days before we cut it–but if I know Hubby, there will be a big piece of that cake missing in the morning! wink

Cookie baking today, Snickerdoodles, Lemon cookies, 200 oreo cookie truffles, magic bars, Almond rocca and still baking! Molasses crinkles or Gingerbread men next? not sure if I want to roll and cut at this point.  I am going to make up some cute baskets for my adult children with all the goodies.

JOJO, I'm glad to hear that your rum cake turned out so well! 

That a good tip to glaze inside the pan once the cake is loose.  I try to let the cooler/thicker glaze drip down the inside/outsides; sometimes it's a bit sticky….but good all the same!

Good luck letting the cake “age!”  You must have hidden the cake!

happy-flowerHello Rileysmom– you are right, that is one good cake–does that tell you how long we waited to cut it? We had a slice for lunch, it was the first time I have ever tasted rum cake, and I really, really, really like it!

 The tip on the glazing in the pan was genius, every drop went into the cake, and it came out of the pan perfectly.

We like bundt cakes, and I will use the same method with the glazing for the orange and lemon cakes.

          I hope your upcoming anniversary is a happy one and you enjoy your cake as much as you did your wedding cake. snuggle

Ooooh, I haven't made a rum cake in forever–love those things!  And all this talk about rum has got me thinking I need to get some to make hot buttered rum on Xmas.

 

Last weekend, my boyfriend saw a recipe on the Guardian website for a lighter, spicier fruit cake covered in dark chocolate, and he decided we needed this for Xmas.  So today we made it (I helped because he doesn't cook very often) and it looks and smells lovely.  When it cools, we're supposed to spoon some Madeira over it then wrap it up and wait (impatiently) for Xmas to come! 

 

We finished making that, then I decided I needed something sweet to eat now, so I've got some walnut bars in the oven.

2 loaves of bread and 2 trays of garlic/parmasaen bread sticks for our family christmas celebration tomorrow. Lasagna is done too just needs to be assembled tomorrow. And then the vegetarian Olive Garden Minestrone soup for my daughter. Phew.
