My husband liked this so much, he asked for the left over with fried eggs for breakfast!  This is a wonderful dish!  ( I added a little fresh chorizo and cumin and corn in when I made it- such a neat meal that you can taylor to your family’s tastes!)  I will be making this often!  Thank you, Suzanne!  Sometimes it is hard for my thick head to come up with new dinner ideas!

Thanks, Cathy!  We love it and it’s really versatile as you can use whatever you want to in the mixture. 

 

Someone was just complaining over in the blog comments about me putting sugar in my cornbread, LOL.  Well, of course, you can leave the sugar out if you want.  I like my cornbread a little bit sweet, even in a savory dish.

I was going to do this last night, but fell into a deep nap yesterday afternoon, so today I’m trying it….a great way to use up some leftover veggies in the fridge!

Have you ever sauted onions in butter, and added them, along with some sour cream to your cornbread?

Niblets corn, diced green chiles, sauted onions are some of the add-ons  I put in cornbread sometimes.  Fixed the cornbread skillet supper for dinner last night.  Added a teaspoon of ground cumin and coriander which I use in all dishes with chilipowder. Yesterday was a cold, gray, rainy day and this dish hit the spot  Thanks again Suzanne for all the fantastic things I have learned from you.
